Summertime Salads

Oh it’s coming. Those 95ºF + days when you can’t turn the humidity off and the sun’s still blazing at dinnertime will be here before you know it (if they haven’t already come your way.) By 6pm, there’s only one thing you know for sure: there’s no way you’re getting in front of a stove! That’s when the dinnertime salad is a must. Here are a few crisp salads that are hearty enough to serve for dinner, but easy enough that you can chill.
Turkey Waldorf: Combine chopped sliced Plainville Farms roasted turkey with Granny Smith Apples, walnuts, red grapes, red onions and chives. Toss together with a creamy ranch dressing and serve on a bed of crisp romaine lettuce.
Classic Chef’s Salad: Choose three of your favorite Plainville Farms sliced deli meats, then chop them up. Add chopped sliced Swiss cheese, cheddar cheese, tomatoes, black olives, cucumbers and carrots. Toss with your favorite vinaigrette and enjoy with fresh bread.
Grilled Turkey Cobb: Layer chopped Plainville Farms Smoked Turkey, crumbled bacon, chopped hard-boiled eggs, diced avocado and crumbled blue cheese on a bed of mixed greens. Top with a light mustard vinaigrette and toss at the table.
Italiano Antipasto Salad: Create a platter of Plainville Farms turkey salami, ham and some sliced provolone cheese. Add roasted peppers, pepperoncini, pickled onions and black olives on the side. Drizzle with a red wine vinaigrette seasoned with oregano, garlic and black pepper. Serve with arugula and plenty of fresh Italian bread.
Club Salad: Place a wedge of iceberg lettuce on a plate as your base. Layer diced Plainville Farms Turkey, crumbled bacon, Swiss cheese and cherry tomatoes on top. Drizzle with a creamy Ranch or Italian dressing and serve with lightly toasted sourdough croutons on top.
