  1. 1 leek, diced
  2. 2 (6.5 ounce) jars marinated artichoke hearts, drained and chopped
  3. 1 (16 ounce) jar roasted red pepper strips, drained and chopped
  4. 3/4 cup freshly grated Parmesan cheese
  5. 3 tablespoons mayonnaise
  6. 2 tablespoons butter
  7. 8 ounces Plainville Farms Roasted Turkey Breast
  8. 8 ounces Plainville Farms Hickory Smoked Turkey Breast
  9. 4 hoagie rolls

  1. Preheat oven to 400 degrees.
  2. Melt butter in a saucepan over medium heat. Sauté diced leek until tender. Stir in the artichoke hearts, roasted red peppers, Parmesan cheese, and mayonnaise, set aside.
  3. To assemble split rolls and top with equal amounts of each kind of turkey breast. Spread liberally with artichoke mixture. Place on baking sheet and bake for 10-15 minutes or until hot and bubbly. Makes 4 servings
