Smoked Turkey Legs

Ingredients

5 Plainville Farms Turkey Drumsticks® 

Brine

6 cups of water

1/4 cup sea salt

1/2 tsp pink curing salt for wet curing

3/4 cup brown sugar

5 bay leaves

1/2 tsp mustard seeds

1 tsp peppercorns

8 cups ice cubes

Dry Rub

3/4 cup brown sugar

1 1/2 tbsp garlic powder

1 tbsp smoked paprika

1/4 tbsp black pepper

Instructions

1. Rinse the turkey leg off with cold water and place in a large container. Add the cloves, peppercorns, bay leaves, mustard seeds, and 8 cups of ice.

2. Prepare the brine solution by boiling the water with the two types of salt and brown sugar. Stir until it mixes in. Once it cools, pour it over turkey legs and ice. Cover and refrigerate for about 48 hours.

3. After about 48 hours take the drumsticks out of the brine and pat them dry. Discard the brine.

4. Mix the dry rub and apply to the turkey legs 2 hours before cooking, allow turkey to heat up to room temperature.

5. Set up your grill or smoker as per the manufacturer’s instructions and preheat it 200-225 F. Add the wood as specified by its manufacturer.

6. Place the drumsticks over the smoking rack and smoke until the meat is tender and juicy. Using a meat thermometer, turkey is done cooking at 170 F internal.
