Turkey and Waffles

Ingredients

Waffle mix

2 large Plainville Farms turkey breast (sliced in half lengthwise)

4 tablespoons of mayonnaise

2 cups of salt & pepper kettle-cooked potato chips

3 tablespoons of butter

3 tablespoons of all-purpose flour

1 1/4 cups of whole milk

Salt & pepper (to taste)

Instructions

Preheat your waffle iron while mixing ingredients for the waffles.

Pour 3/4 cup of the batter onto the iron. Cook until waffle is browned and crispy on the outside. Repeat for all the waffles.

Preheat the oven to 375°F.

Line a large baking sheet with parchment paper; set aside.

Rub the turkey breast halves with mayo and then coat all of the sides with the crushed kettle chips.

Transfer the turkey to the prepared baking sheet and bake for 20 minutes, or until turkey is cooked through and outer crust is slightly browned (the internal temperature should reach at least 165°F.)

In a skillet - melt the flour & butter, whisk together for about 2 minutes.

Add in the milk, salt, and pepper.

Let simmer until thickened, and then remove from the heat.

Place a waffle on a serving plate.

Top with the cooked turkey & then pour gravy on top (generously.)

Make sure to serve warm!

Enjoy!
