This Recipe uses a large variety of leftovers and is super easy!

Thanksgiving leftover Fritters

INGREDIENTS

2 cups of mixed thanksgiving leftovers (turkey, stuffing, mashed potatoes, green beans, etc.)

1 cup of shredded cheese (cheddar or your choice)

1/2 cup breadcrumbs (plus extra for coating)

1 egg

salt and pepper to taste

oil for frying (vegetable or canola)

INSTRUCTIONS

  1. Mix Ingredients in a bowl: combine leftovers, cheese, breadcrumbs, and egg. Season with salt and pepper.

  2. Form balls: Scoop and roll the mixture into 1-2 inch balls, coating them in additional breadcrumbs.

  3. Heat oil: Heat 1-2 inches of oil in a skillet over medium heat until hot (about 350°F or 175°C).

  4. Fry balls: fry a few leftover balls at a time for 3-4 minutes until golden brown. Remove from oil and drain on paper towels.

  5. Serve: enjoy warm paired with your favorite dipping sauce or some gravy!

Feel free to bake at 400°F (200°C) for a healthier option, spraying lightly with cooking spray
