Turkey Bruschetta

Serves 2 people Prep Time 15 minutes Cook Time 25 minutes

Ingredients

  • 1 Italian or french baguette pre sliced
  • olive oil to drizzle over the inside sections of the French bread
  • 2 pieces of Plainville Turkey cutlets
  • 1 mozzarella ball, sliced
  • 1 cup cherry tomatoes quartered
  • 4 tbls olive oil for tomato, mozzarella mixture
  • 6 large basil leaves sliced
  • pepper to taste
  • salt to taste
  • 6 tbs balsamic vinaigrette
  • 2 tsp garlic minced
  • shaved Parmesan to taste

Directions

  1. Slice your baguette in half and place on cutting board.
  2. Drizzle olive oil over both of the insides of the French bread.
  3. Make the tomato bruschetta mixture.
  4. In a small bowl, combine the cherry tomatoes, basil, 4 tbls olive oil, garlic, parmesan cheese, and salt/pepper. Mix well and set aside.
  5. In a sauté pan over medium heat, cook the turkey cutlets just until cooked through. Reserve while warm.
  6. Building the sandwich out, layer with bottom of French bread, turkey cutlet, sliced mozzarella, bruschetta mix, balsamic vinaigrette, and top of French bread.
  7. Cut in half and serve.
