Turkey Burger Skillet

Serves 6people Prep Time 15 minutes Cook Time 45 minutes

Ingredients

  • 1 pound ground turkey
  • 1 tablespoon butter, cubed
  • 1 medium onion, chopped
  • 1 medium sweet red bell pepper, chopped
  • 3 garlic cloves, minced
  • 3 tablespoons tomato paste
  • 2 teaspoons stone-ground mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 2 cups chicken broth
  • 1 cup half and half
  • 2 cups uncooked Fusilli
  • 8 ounces Mild or Medium Cheddar cheese, shredded (2 cups)
  • 4 ounces Colby-Jack cheese, shredded (1 cup)
  • Salt and pepper to taste
  • Minced fresh parsley, optional

Directions

  1. Melt butter in a large skillet over medium heat. Add onion and red bell pepper; cook and stir for 4-6 minutes or until crisp-tender. Add garlic; cook and stir for 1 minute. Remove vegetable mixture from the skillet.
  2. Cook turkey in the same pan over medium heat until no longer pink and turkey has reached 165°F; drain. Add the tomato paste, mustard, garlic powder, paprika, salt, pepper, cayenne pepper and vegetable mixture. Stir in broth and ½ and 1/2. Bring to a gentle boil, stirring constantly.
  3. Reduce heat to medium-low. Add pasta; cook for 8-10 minutes or until tender, stirring occasionally.
  4. Remove from the heat. Gradually stir in cheddar and colby-jack cheeses until melted. Season with salt and pepper to taste. Sprinkle with parsley, if desired.
