TURKEY CUTLET PARMESAN

This turkey thigh dinner would be great paired with your favorite kind of rice & veggie or salad on the side!

Serves 4 Prep Time 12 min Cook Time 30 min

Ingredients

  • 4 Plainville Farms Turkey breast cutlets (approx. 1 to 1.5 lbs), pounded to about ½ inch thickness
  • Salt and freshly ground black pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 cup Italian-style breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ cup olive oil (or a neutral oil like canola) for frying
  • For the Assembly:
  • 2 cups marinara or spaghetti sauce
  • 8 oz fresh mozzarella cheese, sliced or shredded
  • ¼ cup additional grated Parmesan cheese
  • Fresh basil or parsley, roughly chopped (for garnish)

Directions

  1. Prep the Turkey: Season both sides of the turkey cutlets with salt and pepper. Set up three shallow bowls. Place the flour in the first, beaten eggs in the second, and mix the breadcrumbs, Parmesan, and garlic powder in the third.
  2. Bread the Cutlets: Dredge a turkey cutlet in the flour, shaking off any excess. Dip it into the egg wash until fully coated, then press it firmly into the breadcrumb mixture until evenly coated. Repeat with all cutlets.
  3. Fry until Golden: Heat the oil in a large skillet (cast-iron works great) over medium-high heat. Cook the cutlets for 3 to 4 minutes per side, or until the breadcrumbs are golden-brown and crispy.
  4. Bake & Melt: Preheat your oven to 425°F . In a 9x13-inch baking dish, place the fried cutlets, fresh basil, then spoon the marinara sauce over each piece. Cover generously with mozzarella and the remaining Parmesan cheese.
