Turkey Wild Rice
Serves 8 people

Ingredients
- 4 Plainville Farms Turkey Thighs (can substitute 1 whole turkey breast as well)
- 2 quarts cold water
- 2 quarts Chicken Stock
- 2 large onions, medium diced
- 4 carrots, medium diced
- 3 stalks celery, medium diced
- 4 cloves garlic, chopped
- 1 tablespoon kosher salt
- ½ teaspoon ground black pepper
- ½ teaspoon ground dried sage
- ½ teaspoon dried thyme
- ½ teaspoon celery salt
- 2 cups cooked wild rice
- 2 tsp parsley, finely chopped
Directions
- Place turkey thighs and water/stock in a large soup pot and bring to a low boil, then drop down to a simmer. Cook for approximately 2 hours. Strain liquid and reserve both broth and meat separately. Remove and discard bone/skin from meat. Chop meat and set aside meat.
- In a medium stock pot, sauté onions, carrots, celery, garlic, salt, and black pepper. Cook for 8-10 minutes or until onions become translucent.
- Add sage, thyme, and celery salt; reduce heat to a simmer and cook for an additional 5 minutes. Add previously reserved stock and cook on low for approximately 2 hours.
- Add in turkey meat and parsley.
- Divide wild rice among soup bowls and ladle turkey soup on top.
- NOTE**** Turkey breast can be substituted for turkey thighs. If using turkey breast, roast breast meat and then dice. Remove water from recipe and increase chicken stock to 4 quarts as well
