This turkey meatball recipe could be the answer to tonight’s dinner!
Turkey Meatball Sub
Ingredients
2 lb. of Plainville Farms Ground Turkey
2 large eggs
1/3 cup of seasoned breadcrumbs
1/4 cup of chopped parsley
2/3 cup of grated parmesan
4 tablespoons of minced garlic
1 24-oz. jar of marinara sauce
8 sub-style rolls
2 1/2 tablespoons of extra-virgin olive oil
12 ounces of sliced provolone
Instructions
1. Whisk eggs with 3 tablespoons of water.
2. Stir in the breadcrumbs; let stand 5 minutes.
3. Add parmesan, parsley, garlic and turkey; mix gently until well combined.
4. Roll mixture into 24 balls.
5. Transfer meatballs to a large dish. Refrigerate for 30 minutes.
6. Pour marinara into a deep pot with a lid and warm over medium-high heat.
7. Add meatballs, cover, and cook 15 minutes.
8. Uncover and turn meatballs. Cover: cook 10 minutes longer, until meatballs are no longer pink inside (the internal temperature should reach at least 165 degrees F.)
9. Preheat broiler to high.
10. Cut rolls lengthwise and drizzle inside of each with 1 tsp. olive oil.
11. Divide cheese among rolls and place on baking sheet.
12. Broil until the cheese is melted and bread is lightly toasted, about 2 minutes.
13. Serve immediately and enjoy!
